Swedish Limpa Bread

I know, I know…you’re thinking this lady has no business posting food pictures! I’d retake the picture, however, the loaf is almost gone after packing lunches this morning!  But, I just had to show you the book that I got the recipe out of for this loaf of Swedish Limpa Bread. YUM! It is a hearty bread. If you like a crunchy crust and a chewy inside this is the bread for you! There is a similar recipe here. However, I didn’t use any molasses, and I used butter instead of shortening, and added 2 tsp of Caraway seeds. This is going to become a regular around here. I especially liked that there is very little fat in the recipe. Seriously, if you like to bake bread at all you have to try it! We (6 of us) devoured one loaf straight out of the oven with a smear of butter and some cheese. Heaven!

Now, I did jog three blocks and one foot yesterday. Then walked briskly for about 20 minutes. I also developed a mild case of shin splints. And…woke up at 3:30 AM because my body was in pain. Not my shins, my thighs. This is really such a surprise cause I thought I was in reasonable shape, not great shape, but reasonable…guess I was wrong!!

The bread sounds delish! Think of those shin splints and middle of the night leg cramps as your bodies way of saying thanks for taking care of it. (Like I have room to talk.) I'm proud of you though. Keep up the good work.

Oh wow, the bread is gorgeous and yes, exactly the kind I love! I'm with you on leaving out the molasses, not that I don't like it, but just not a big fan of sweet breads. Caraway seeds sound like the perfect touch; our taste buds must be pretty much identical. :-)

Hope your shins are much better by now!
